No Bake Key Lime Cheesecake
You can purchase graham cracker crust and refrigerate or make:
1 Cup ground graham crackers (or crush 9 crackers
3 Tbls. sugar
1/2 Teaspoon salt
5 Tbls. unsalted butter melted and cooled
Wisk together cracker crumbs, sugar & salt. Stir in butter, mix until it
holds together when squeezed. Press evenly into 9"springform. Freeze for 15
2 80z packages of cream cheese/room temp.
1 14 oz can sweet and condensed milk
1/3 cup Key Lime juice/2 TBLS grated zest.
Lime peel for decoration
1/2 tea. vanilla
1/2 cup cold heavy cream
In an electric mixer w/ paddle, beat cream cheese and condensed milk on high
for 5 minutes. Add lime juice, zest and vanilla. Mix 1 minute.
Whip cream till it peaks, gently fold into cream cheese mixture. Pour over
chilled crust, smooth top w/ spatula. Cover with plastic. Refrigerate at
least 12 hours, up to three days.
Optional: garnish with raspberries and shaved chocolate.
